In preparation for our upcoming trip to Copenhagen, Ryan and I cleared out most of our fridge about a week before taking off. We then planned for eating out a few nights, including using up some old Groupon type dealios and joining our families for dinner. On one of the nights, we decided to stop by Fresh & Easy for a few items since their portions are small and intended for households of our size. Browsing through the store, we found all the ingredients for a Danish-themed Fresh & Easy date night – perfect for getting us in the mood of our trip!
We went with a picnic-style dinner of cheese, crackers, smoked salmon and pickled asparagus (mostly fresh&easy branded, except for the asparagus), plus the tomato and basil soup from their Italian Kitchen line. We also bought a can of kippered herring to go with our theme, but ended up not opening it up. Guess we’re saving that for another meal! We’ll have to see how the one we found at Fresh & Easy compares to what we find in stores around Copenhagen!
The meal was on the lighter side, so of course, we had room for dessert! Mini key lime pies and strawberries.

We usually shop there because it’s located nearby, and as I mentioned earlier, they offer the perfect portion size for smaller households. They do also carry larger items, but the smaller size is what gets us in the door. Not to mention, there seems to be a good variety, and they strive to carry items with no added trans fats or HFCS, so we don’t HAVE to obsessively check all the labels (we still do).
Olive oils from different regions + more than a handful of cheeses to choose from + all the cracker flavors to eat those cheeses with.
