Keep It Simple, Honey.

Over the long weekend, we slept in every day, making it difficult to get back into the morning routine. The best we can do is to simplify and shorten it. The less complicated, the easier it will be to get out the door. As it is, I am not a morning person. Taking Sasha on her morning walk forces me outside, but the brain is still warming up at that point.

To keep our mornings on the shorter side, we have breakfast prepared the night before and fruits/veggies all washed and ready for juicing. Last night, I decided to make oatmeal in a jar for Ryan. It’s all over the internet and so simple.

Prepare your oatmeal of choice. I think this works best with oatmeal you cook over the stove, rather than the instant stuff. Ryan likes steel cut oats. Let it cool a little bit before putting it into a jar. The small Bell jars are just the right portion!

Then add your toppings. We went with Honey Ridge Farms’ Clover Honey Creme, slices of Asian pear, some dried figs, and cinnamon.

Enjoy the next morning! The honey creme and cinnamon sit in the oatmeal and work their flavors in. The best part about this is that you don’t really need to follow a specific recipe. You add what you like, and you can make several jars and eat them throughout the week!

For the non-oatmeal eater in me [I'm slowly learning to eat that particular texture], I like a simple toasted English muffin topped with honey creme. I used Honey Ridge Farms’ Apricot Honey Creme this time around, but really ANY of their flavors would work.

All seven [Apricot, Blackberry, Clover, Cranberry, Lemon, Raspberry, Spiced] are made from raw USA honey, fruits and/or spices.

It’s quick and easy, and I actually buy the English muffins in bulk and bring them into work. Extra bags of English muffins go into the freezer!

Love for yet another machine…

Yesterday, I was on a mission. I’m not really sure how it came to be, but I couldn’t sleep most of Friday morning. In my somewhat delirious state, I declared that I would not be satisfied until I had a Dyson in my home.

After a little bit of research, I was determined to bring home a Dyson DC25 Animal. While not the latest Dyson model [the DC41 is], it was what I thought would solve my “everyone in this house sheds” issue [AND IT DOES]!

For Black Friday, the Dyson DC25 Animal was on sale at Costco.com. I could have placed the order online, but instead, I went on a physical hunt for one. I wanted to bring one home and use it right away! Sometimes instant gratification really does trump all.

Long story short, we ran around the Bay Area in search of the vacuum, took a dim sum break and ended up successful. Bellies were full of dim sum, and there was a Dyson DC25 Animal sitting in the trunk. It was quite the investment, considering money is rather tight these days, but how much it improves the quality of life makes it worth eating cheaply and cutting spending in other areas. I’m also justifying it by comparing the amount I paid to the price of the newer DC41. MUCH cheaper.

It’s one powerful machine, picking up dust, dirt, fur, and hair! I LOVE IT.

Best of all, it’s purple.

Lemon Honey Cookies with Cranberries

For Thanksgiving meals at friends’ homes, I decided to bake cookies as my contribution.

I wanted to try incorporating flavored honey cremes into cookies and found a very simple honey cookie recipe online to work with. With just a few tweaks, they turned out quite nicely. The lemon honey flavor was subtle, and the cookie was chewy in texture.

Lemon Honey Cookies with Cranberries [adapted from Food Network]

Ingredients:
1 cup butter, room temperature
3/4 cup brown sugar, packed
2 eggs [I used three small ones]
1 cup lemon honey creme
1 teaspoon vanilla
3 1/2 cups flour
2 teaspoons baking soda
dried cranberries

Lemon Honey Cookies with Cranberries

What To Do:

1) Cream the butter and sugar.

2) Add eggs, lemon honey creme, and vanilla. Blend until smooth with the mixer.

3) Into this mixture, add flour, baking soda and cranberries. Mix into a thick dough.

4) Chill dough until firm, preferably in freezer, approximately 2 hours. I didn’t wait that long.

5) When ready, preheat oven to 350 degrees.

6) Pull off small pieces and roll into 1-inch balls. Place on ungreased cookie sheet.

7) Bake for 10 to 15 minutes or until golden. 12 was my magic number.

If given the opportunity, I think that Ryan would have eaten all of the dough. It was lemony, buttery, and sweet. I left the dough in the freezer for about an hour and a half before bringing it out for use.

I have a few cookie swaps coming up. I might try other honey creme flavors for those! Considering how easy the recipe was, this might become my go-to cookie.
