Last week, I was craving hummus and baba ghanoush. I looked both up online, and they seemed fairly simple to make. I wasn’t sure if I wanted to wait until the new food processor came in, but then I went ahead and bought these three eggplants at the farmers’ market on Saturday. Three for $1.

We asked at one stand, and the guy held up eight fingers and said, “Eight dollars.” We just looked at him and walked off. Are you kidding me?! That’d better be a magical eggplant. RV was sure that the man was setting us up for a Candid Camera moment. Three for $1 versus one for $8? Other stands were asking for $1/pound, which seemed more reasonable.

It’s been unusually hot these days, so I decided to make the two dips tonight. While preparation can break you into a sweat, eating them after refrigeration is absolutely refreshing! I first roasted the eggplants in the oven [which is why they are punctured with fork-shaped wounds], but they were too thick, so I went for the over-the-stove technique. Hooray for gas stoves!

After separating the meat from the skin of the eggplants, I threw it into the food processor. A bit of salt, several spoonfuls of tahini, a dash or four of olive oil, and some minced garlic later, the baba ghanoush was ready to be served with pita.

So good! The raw garlic gave it a bit of a kick! I didn’t write down how much of each ingredient I used since I pretty much taste-tested the entire time. It met the approval of both RV and the sister, at least!

Same for the hummus! Lots of taste-testing and not enough specific measurements. I originally wanted to use the dry chickpeas I bought last week, but that would’ve required 8+ hours of soaking ahead of time. Minor oversight. RV brought home a can of chickpeas/garbanzo beans, and into the food processor that went. I added olive oil, salt, oregano, garlic, and tahini – not in that order.

The overall flavor was good, but if I had more time, I would’ve left it in the fridge longer. I will definitely try making these again [with the appropriate amount of time]!

It looks like the food processor, which I had previously tossed aside as a useless appliance, is more and more important in my adventures in the kitchen. I am really looking forward to the arrival of the new food processor!

      That wasn’t part of the original plan. :P It was just there as filler. Next time, cucumber yogurt salad!

    It seems like your farmer’s market has amazing deals (eggplants, avocados). Which leads me to ask, have you ever thought about doing a share of community-supported agriculture?

      We thought about that, but it’s more expensive for us. I would certainly do it if money wasn’t an issue.They give you what’s in season, which is awesome. It puts on the pressure of preparing foods at home. Every week, the amount of meals prepared at home varies so much that I don’t think I could set up something like that just yet. Some weeks, we really just don’t eat at home at all.Plus, I do enjoy the trips to the supermarket/farmers’ market now and again to get the stuff that I want. I’ve seen some of those boxes, and as much as I would love to try new veggies, sometimes I just want what I want, and I won’t know what to do with the unfamiliars if I don’t really feel like eating them that week.

      Currently, I’m just using the attachment that came with the blender. Nothing fancy. It’s really small, in fact. I just ordered the Kitchenaid 12-cup in red, and it’s supposed to be coming today or tomorrow!

    Looks delicious! Two of my favorite dishes and can you believe, I’ve never made them myself either?!

    How long did it take you to make? I need to invest in a food processor (blender just doesn’t cut it) soon.

      Roasting the eggplant took awhile, but I found that the shortest way is over the stove instead of the oven, or maybe by using Chinese eggplant (the skinny kind), it’ll be faster.

      It’s really quick in the food processor once you have your ingredients prepped! Hummus was easier since we used the can of garbanzo beans. You throw everything in and let the machine do the work!

    We roast our eggplants over a barbecue, it’s delicious. You could also roast the garlic. Yum!

      Ooh, good idea. It was very hot last night, so I didn’t want to roast anything else. :p I can’t wait until our backyard is done, so we can have a proper BBQ… Or maybe we can get those grilling covers for the top of the stove?

    Dude! I made hummus tonight too! My secret ingredient is a spoonful of peanut butter and a dash of tabasco. You cant actually taste those two ingredients directly, but the hummus is out of this world!
